YOU CAN USE ALL GOLDEN BEETS IF YOU DO NOT WANT THE PURPLE COLOR EVERYWHERE
4 GOLDEN BEETS
3 RED BEETS
2 BOXES OF CHICKEN BROTH
CLEAN THE BEETS AND CUT OFF THE STEM AND ROOTS. LEAVE ON THE SKIN, YOU ARE GOING TO KEEP THAT, JUST WASH WELL. CUT THE BEETS INTO SQUARES AND BOIL IN WATER FOR ABOUT 5 MINUTES. DRAIN AND PUT BACK INTO POT. ADD THE CHICKEN BROTH AND LET SIMMER TILL BEETS ARE COMPLETELY SOFT (about 30 minutes). PUT THE SOUP IN A BLENDER TO PUREE. MY BLENDER IS SMALL SO I DID IT IN BATCHES. I MADE IT PRETTY SMOOTH. IT IS A SUPERFOOD AND LOW CALORIE AND PACKED WITH GOOD STUFF!!!
