GARLICKY, CHEESEY EGGPLANT PIZZA:

2 POUNDS OF EGGPLANT
2 TABLESPOONS OF OLIVE OIL
1 TSP OF DRIED OREGANO
1 CUP OF YOUR FAVORITE SAUCE
1⁄2 CUP OF MOZZARELLA CHEESE
1⁄2 CUP OF PARMESAN CHEESE
1⁄2 TEASPOON OF GARLIC POWDER
1⁄4 CUP OF FRESH BASIL (ANIT-INFLAMMATORY HERB)

PREHEAT OVEN TO 400 DEGREES. SLICE THE EGGPLANT
ABOUT 3⁄4 AN INCH THICK. BRUSH BOTH SIDES WITH OLIVE
OIL. SPRINKLE THE TOPS WITH A LITTLE SALT AND OREGANO.

PLACE THE EGGPLANT ON A BAKING DISH AND BAKE 20
MINUTES – (TENDER BUT STILL HOLDS IT SHAPE).
IN A BOWL, TOSS THE CHEESES, BASIL AND GARLIC POWDER
TOGETHER.

TAKE OUT OF THE OVEN AND TOP WITH A THIN LAYER OF
SAUCE, BOTH CHEESES, GARLIC POWDER AND CHOPPED BASIL
MIX. PUT BACK IN THE OVEN FOR ABOUT 3 MINUTES OR
UNTIL CHEESE IS LIGHTLY BROWN AND MELTY.
