LOVE IS IN THE AIR – VALENTINE STUFFED PEPPERS

Red Peppers are the highest in antioxidants, the sweetest and  the easiest to digest! That spells love to all you make it for! 

4 (plus one extra to make valentine shapes) Red peppers cut  horizontally

1 can of black beans, drained and rinsed

¼ cup of chopped scallions

1 cup of cauliflower rice

1 cup mozzarella cheese (plus a little extra to sprinkle on top) 2 cups of your favorite red sauce (I love vodka sauce) 1 can of white beans, drained and rinsed

½ cup of chopped roasted peppers

2 garlic cloves, chopped finely

½ cup of chopped black olives

 

Mix everything together in a bowl and stuff into the pepper  halves. Top with cheese and the cut-out valentines.

Pre-heat oven to 350 degrees. Place the peppers in a baking  dish and cook for about 45 minutes.
