MASHED POTATOES FROM AN ACORN SQUASH?

I WAS AT THE LOCAL FARM (BEST’S FRUIT FARM IN HACKETTSTOWN) AND
SAW WHITE LOOKING ACORN SQUASH. I ASKED THE WOMAN
WORKING THERE WHAT THEY WERE. SHE TOLD ME THEY WERE
“MASHED POTATO ACORN SQUASH.” SO, OF COURSE, I BOUGHT
THEM. I CUT THEM IN HALF, TOOK OUT THE SEEDS AND PUT THEM
UPSIDE DOWN ON A COOKIE SHEET (I RUBBED THE MEAT WITH A
LITTLE OLIVE OIL SO THE WOULD NOT STICK TO THE PAN).

I ROASTED THEM AT 375 DEGREES TILL THEY WERE SOFT. I SCOOPED
THEM OUT OF THEIR SKINS, PUT THEM IN A BOWL AND ADDED A
LITTLE KERRY BUTTER. I WHIPPED THEM LIKE I WOULD A POTATO,
ADDED A LITTLE SALT AND – DELICIOUS! MAYBE NOT EXACTLY A
MASHED POTATO, BUT THEY SURE LOOKED LIKE THEM AND TASTED
REALLY GOOD! FULL OF FIBER, AND VERY FILLING!
