6 green peppers (or however many your family needs)
brown rice (fiber) follow cooking directions for 2 cups
3 fresh garlic cloves sliced
1 pound of ground turkey meat
2 tomatoes chopped
1 onion chopped
1 jar of favorite sauce ( organic if possible)
dash of olive oil
1 cup of shredded cheddar cheese
Saute onions and garlic in the olive oil till lightly brown. Add turkey meat and cook thoroughly. Add chopped tomatoes and sauce and let simmer. Add the cooked rice (directions on the bag) to the meat mixture. Stir and set aside. Wash the peppers ( fun fact, green peppers are actually unripe peppers, they have a stronger flavor and some people may not digest them as easily. But they are shamrock peppers!) taking a small paring knife ( I used the kids pumpkin cutting knife ) and cut out a shamrock on the side. It is really just 3 small hearts. Pop out the shamrock and set aside. That I left raw. Stuff the peppers to the top, they will not come out of the shamrock cut. Top with a little cheese and bake at 350 degrees for about 45 minutes. Top with shamrock cut out and enjoy!
