1 box of green noodles ( I had to buy a box of tri color noodles and pull out the green), but they do sell green veggie noodles
1 bag frozen peas
1 small green cabbage (chopped)
3 green zucchinis ( sliced )
1 bunch green scallions
2 cups baby spinach
2 boxes of chicken broth
1 pinch of chili flakes
In a large pot, add chicken broth and 2 cups of water. Add sliced zucchinis, cabbage, frozen peas and chili flakes. Bring to boil, then simmer about 20 minutes. In a separate pot, cook the green noodles and drain. Add spinach to the veggie mix and cook another 5 minutes till wilted. Poor into bowls and top with chopped scallions. For a little extra flavor top with a sprinkle of Parmesan cheese. Go Green!
