AVOCADO CHICKEN SALAD

1 LARGE, RIPE AVOCADO
1 FRESH SQUEEZED LEMON
SALT/PEPPER TO TASTE
2 CUPS OF CHOPPED ROTISSERIE CHICKEN BREAST
1⁄2 CUP OF RED GRAPES
1⁄2 CUP CHOPPED CELERY

IN A LARGE BOWL, SMASH THE AVOCADO, ADD LEMON
JUICE, SALT/PEPPER, AND MIX. FOLD IN CHICKEN,
GRAPES, AND CELERY. THE MASHED AVOCADO HOLDS
IT TOGETHER AND MAKES A CREAMY DRESSING.
