1 SMALL JALAPENO (SEEDS REMOVED, BUT THE JERK SAUCE IS SPICY SO THIS MIGHT BE TOO HOT FOR SOME SO IT IS OPTIONAL)
1 LARGE SWEET ONION
3 GARLIC CLOVES SLICED
2 CUPS OF FRESH PINEAPPLE CUT INTO SQUARES
2 TLB SPOONS OF OLIVE OIL
¾ CUP OF LAWRYS CARIBBEAN JERK SAUCE
BROWN OR WHITE RICE. FOLLOW DIRECTIONS ON BAG OR BOX
COOK THE CHICKEN IN A PAN WITH OLIVE OIL TILL BROWN IN A SEPARATE PAN COOK THE PEPPERS, ONION, GARLIC TILL TENDER. TOSS IN THE PINEAPPLE. COMBINE CHICKEN WITH THE MIX AND ADD THE JERK SAUCE. COOK TILL HOT AND WELL MIXED. SERVE IN A BOWL OVER THE RICE OF CHOICE.
