2 VERY RIPE BANANAS
1⁄4 CUP OF MELTED KERRY BUTTER
1⁄2 CUP OF OATS
1⁄2 CUP OF GREEK YOGURT
1⁄2 CUP OF MILK (OR MILK OF CHOICE)
3⁄4 CUP OF CANNED PUMPKIN
1 EGG
1 TSP VANILLA EXTRACT
1 1⁄4 CUPS OF ALMOND FLOUR
1 TSP OF CINNAMON
1 TSP OF BAKING SODA
1 TSP OF BAKING POWDER
1⁄4 TEASPOON OF SALT
1⁄4 CUP OF MAPLE SYRUP
PREHEAT OVEN TO 425 DEGREES. SPRAY MUFFIN PAN WITH COOKING SPRAY
IN A BOWL, MASH THE BANANAS, THEN ADD BUTTER, MAPLE SYRUP,
YOGURT, MILK EGG, PUMPKIN AND VANILLA EXTRACT – MIX
IN ANOTHER BOWL MIX, FLOUR, OATS, CINNAMON, SALT, BAKING
POWDER AND BAKING SODA
ADD DRY INGREDIENTS TO WET AND MIX, BUT DO NOT OVER MIX,
LUMPS ARE FINE
POUR INTO MUFFIN TINS AND SPRINKLE WITH A FEW OATS
BAKE FOR 5 MINUTES AND REDUCE HEAT TO 350 DEGREES. BAKE 20
MORE MINUTES.
