SPRAYED WITH COOKING SPRAY AND TOP WITH OTHER
QUESADILLA (MAKE AS MANY AS YOU NEED). COOK
TILL CRISPY ON THE OUTSIDE AND MELTED CHEESE ON
THE INSIDE. TOP WITH A DAB OF SOUR CREAM!

2 CUPS OF CUBED BUTTERNUT SQUASH (I BUY IT
ALREADY DONE)
SHREDDED CHEESE OF CHOICE
1 CAN OF BLACK BEANS, DRAINED AND RINSED
1 TABLESPOON OF MARIE’S CHIPOTLE RANCH DRESSING
1 TEASPOON OF OLIVE OIL
SAUTE THE ONIONS AND BUTTERNUT SQUASH IN THE
OLIVE OIL TILL BROWN. IN A SEPARATE BOWL MIX
CHIPOTLE RANCH DRESSING WITH THE BLACK BEANS,
ADD IN THE COOKED ONIONS AND SQUASH AND MIX.
IN A PAN – SPRAY WITH COOKING SPRAY- PLACE A
WRAP. TOP WITH THE MIXTURE AND ADD CHEESE ON
TOP, PLACE ANOTHER WRAP ON TOP OF THAT AND
MAKE CRISPY ON THE OUTSIDE AND MELTY ON THE
INSIDE!
OLD BAY AND SHRIMP QUESADILLAS

1/2 CUP OF SHREDDED MONTEREY JACK CHEESE
1 TSP. OF OLD BAY SEASONING
4 SHRIMP PER QUESADILLA
1 RIPE AVOCADO – THINLY SLICED
1 CHOPPED TOMATO
SPINACH
COOKING SPRAY FOR PAN
SMALL PAD OF BUTTER
MELT BUTTER IN A PAN AND ADD THE SHRIMP AND OLD BAY.
COOK ABOUT 2 MINUTES. CLEAN THE PAN AND SPRAY WITH
COOKING SPRAY. LAY OUT THE WRAPS AND TOP WITH
SHRIMP, CHEESE, AVOCADO SLICES, TOMATO AND SPINACH.
TOP WITH OTHER WRAP AND COOK TILL WARMED THROUGH
AND CRISPY ON THE OUTSIDE.
