Ingredients
• 1 (14.75 ounce) or 2 of the smaller cans of canned salmon
• 1⁄2 cup seasoned dry bread crumbs
• 1⁄4 cup chopped onion
• 1 large egg
1 tablespoon of Dijon mustard
• 1 tablespoon olive
Directions
1. Drain and reserve liquid from canned salmon; place salmon
in a medium bowl. Add bread crumbs, onion, mustard and egg; mix
well to combine.
2. Shape mixture into patties, adding reserved liquid from
salmon if the mixture is too dry.
3. Heat oil in a large skillet over medium heat; add patties and
cook until golden brown, about 3 to 4 minutes per side. Drain on paper
towels and serve.
YOU CAN TOP WITH TAHINI SAUCE FOR EXTRA
GOODNESS:
1⁄2 cup of low-fat Greek yogurt
1 tablespoon of lemon juice
1/3 cup of chopped parsley
1⁄4 teaspoon of salt
