PURPLE CABBAGE, SCALLIONS AND FRESH SLICED GARLIC AND THE SUPERFOOD GOODNESS OF MUSHROOMS

1 PURPLE CABBAGE

1 BUNCH OF SCALLIONS

5 GARLIC CLOVES SLICED

1 PACKAGE OF ANY KIND OF MUSHROOMS

 CHOP UP A HEAD OF PURPLE CABBAGE (TAKE OUT THE CORE)

TOSS WITH OLIVE OIL AND PLACE ON A BAKING SHEET. SALT AND PEPPER AND ROAST IN THE OVEN AT 400 DEGREES (ABOUT 30 MINUTES, YOU WANT THE CABBAGE TENDER AND THE EDGES CRISPY)

IN A PAN ON TOP OF THE STOVE COOK MUSHROOMS IN A LITTLE OLIVE OIL FOR ABOUT 10 MINUTES, ADD SCALLIONS AND GARLIC AND COOK TILL CRISPY.  PUT ON TOP OF THE CABBAGE AND SERVE
