1 smaller spaghetti squash, washed and cut
horizontally, seeds out
1 square of low-fat feta cheese
Olive oil
Cherry tomatoes
2 chopped scallions
Pinch of cayenne ground pepper
You can really add what you want: I used sliced
black olives and scallions with one and tomatoes,
olives, scallions with the second. Use your
imagination!
Heat oven to 400 degrees. Brush the squash with
olive oil, sprinkle with a little cayenne pepper, and
turn the meat side down. Bake for 20 minutes.
Take out of the oven and place in a cut square of
feta and add your toppings, drizzle each with
about 1 teaspoon of olive oil. Put back in oven for
45 minutes. I scooped one at a time out into a
bowl, mixed and placed back in the shell (use the
shell as the bowl). Absolutely amazing!!
