SIX INTO LITTLE CIRCLES
1 PACKET OF BOIL IN A BAG JASMINE RICE (FOLLOW COOKING INSTRUCTIONS
ON THE BOX)
4 SCALLIONS CHOPPED
1⁄2 CUP OF SHREDDED MOZZARELLA CHEESE
1⁄2 A JAR OF ALFREDO SAUCE OR WHITE GARLIC SAUCE
SAUTE THE ZUCCHINI, SMALL RED PEPPERS AND SCALLIONS IN A LITTLE OLIVE
OIL TILL TENDER (3MINUTES) ADD SAUCE, COOKED RICE, CHEESE AND MIX.
PLACE YOUR PEPPER HALVES ON A BAKING DISH AND STUFF WITH THE
MIXTURE.
PREHEAT OVEN TO 350 DEGREES AND COOK FOR 40 MINUTES OR TILL THE
PEPPER IS TENDER. TAKE THE REMAINING SMALL PEPPERS AND CUT IN HALF.
TAKE OUT SEEDS AND CUT INTO THE SHAPE OF A HEART WITH COOKING
SCISSORS. TOP THE PEPPERS AND HAPPY VALENTINES DAY! ADDING A GLASS OF
RED WINE IS OPTIONAL (AND A GREAT IDEA)
