WILD RICE AND SHIITAKE MUSHROOM IMMUNE BOOSTING, INFLAMMATION FIGHTING, SO GOOD SOUP

1⁄2 cup of any preferred milk
1 sweet onion chopped
1 celery chopped
3 carrots chopped small
1 package of shitake mushrooms
5 garlic cloves minced
2 boxes of low sodium chicken broth
1 can of white beans, drained and rinsed
1⁄2 teaspoon of pepper
1 tablespoon of soy sauce
A little bit of shredded mozzarella cheese to top
1 cup of wild rice (not wild rice blend)

Cook onion, celery, carrots and mushrooms in a dash of olive
oil for about 2 minutes. Add garlic and cook another minute.

Add broth, wild rice and pepper. Bring to a simmer and let
cook 30 minutes. Add beans and simmer for another 30
minutes. Add the milk and stir, let simmer another 5 minutes.
Add soy sauce and stir.

Top with a little shredded cheese. Super food, Super good,
Super filling!
