ZUCCHINI GRATIN – STEP ASIDE POTATOES

2 CLOVES OF GARLIC MINCED
3 TABLESPOONS OF OLIVE OIL
1 TEASPOON OF PARSLEY
1⁄4 TEASPOON OF SALT
PEPER
3 MEDIUM ZUCCHINIS THINLY SLICED
1⁄2 CUP OF SEASONED BREADCRUMBS (RARE MOMENT)
2 TABLESPOONS OF PARMESAN CHEESE

• PREHEAT OVEN TO 450 DEGREES
• SPRAY YOUR BAKING DISH. COMBINE GARLIC, 1
TABLESPOON OF OLIVE OIL, PARSLEY, SALT/PEPPER IN A
LAGRE BOWL. ADD ZUCCHINI AND COAT EVENLY. PUT
INTO BAKING DISH
• ROAST FOR 15 MINUTES
• IN ANOTHER BOWL ADD THE BREADCRUMBS, PARM
CHEESE AND 2 TABLESPOONS OF OLIVE OIL
• SPRINKLE THE TOPPING OVER THE ZUCCHINI AND COOK
15 MORE MINUTES.
