PICKLED EGGS – GROSS? GOOD? HEALTHY?

ONE DAY AT WORK THE RECEPTIONIST WAS TALKING ABOUT PICKLED EGGS.  I REMEMBER SEEING THEM ONCE ON A SHELF AT A DIVE BAR IN COLLEGE AND BEING GROSSED OUT AT THE THOUGHT OF EATING A PURPLE EGG, SITTING ON A SHELF, IN A GLASS JAR. 

THE RECEPTIONIST ASSURED ME THAT I WAS WRONG AND NEEDED TO PRACTICE WHAT I PREACH AND TRY SOMETHING NEW.  HER RECIPE TAKES 30 DAY TO COMPLETE AND WAS TOP SECRET. 

THE DAY CAME QUICKLY – AT LEAST TO ME – AND SHE ARRIVED WITH BOWLS AND VERY PURPLE EGGS.  I PUT MY MONEY WHERE MY MOUTH IS AND TOOK A BITE………IT TASTED LIKE BEETS! (THUS, THE PURPLE COLOR) AND WAS GORGEOUS INSIDE!!! PICKLED EGGS ARE LOADED WITH PROTEIN, BEETS ARE A SUPER FOOD AND IT WAS ……. INTERESTING!   I DON’T KNOW IF I WOULD EAT ONE FROM A JAR ON THE SHELF AT A SKETCHY BAR, BUT I AM VERY GLAD I TRIED HER BEAUTIFUL EGGS!

I DON’T HAVE HER RECIPE, BUT I KNOW THE INTERNET IS LOADED WITH DIFFERENT ONES IF ANYONE IS CURIOUS.
